## Summary

Arne Saupe, VP of Technology at Farmer’s Fridge, explains how the Chicago-based food company uses IoT technology to manage its network of fresh-food vending machines, particularly in high-traffic airports. He details the technical challenge of maintaining sales during internet outages by queuing transactions locally and the regulatory hurdles of deploying food service equipment in secure environments. Saupe also discusses the company's expansion into major retailers like Costco and Target, and the future roadmap involving a complete hardware overhaul and dynamic pricing promotions.
