## Summary

Jason Murphy, Managing Director of Global Retail at IMS-Evolve, discusses how IoT technology helps major supermarket brands reduce food waste and energy costs by monitoring and optimizing refrigeration infrastructure. He explains that IMS-Evolve uses edge computing and AI to predict equipment failures before they impact food quality, achieving 50-90% reductions in waste from refrigeration breakdowns. Murphy also highlights a collaboration with the University of Lincoln to develop a 'food quality index' using blockchain to replace arbitrary 'use by' dates, aiming to reduce consumer-side waste.
